During industrial training I worked in three major department Front office, F & B, and Kitchen. In
kitchen stint I worked in Halwai and Bakery department. I learned about Indian sweets and carrying out
bakery operations under the chef guidance. As major part of my kitchen stint I spent in bakery
department where I learned how bakery operations are carried out, what mise en place is required,
maintaining quality and hygiene of the products, also learned to prepare various products and
operating machines.

Incorporation of Indian spices in Craft beer IHM, Mumbai.
As an Indian we miss our culture and food at every corner of the world. So we had a thought of infusing
Indian spices in beer. In this research we introduce Fennel, Maze, Kokum and combination of Clove &
Fennel flavor in beer. We successfully prepared beer with the Indian flavors and had great response
from craft brewers and people.
