Vegan almond cookies
Vegan Almond Cookies
Serves: 30
Prep Time: 40 min + allow 2 hours for chilling
Ingredients:
2 cups of purpose flour
1 egg substitute
½ cup of vegan butter
½ cup of shortening
¾ cup of unrefined sugar
30 blanched almonds
3 teaspoons of almond extract
½ teaspoon of baking powder
½ teaspoon of baking soda
Directions:
1. Preheat the oven on 325 F (162 C).
2. Combine all the ingredients in an electric dough maker or in a large bowl then knead it to make a slightly crumbly dough.
3. Roll the dough into 2 logs then cover it and chill it in the fridge for 2 h.
4. Once the time is up, cut the logs into 1.5 pieces then shape them into a ball.
6. Place the cookies in a covered baking sheet then brush them with some almond milk.
7. Press an almond in the centre of each cookie then bake them for 15 to 18 min.
8. Once the time is up, allow the cookies to cool down for 15 to 30 min then serve them and enjoy.
